Cake Baking Discoveries

My husband made me a birthday cake this year. It was a big deal just because he normally doesn’t do anything for birthdays, anniversaries, mother’s day, father’s day. . .well, you get the idea. He had made me a couple of b-day cakes in the past, but those were in the first few years of marriage and without me hassling him.

This year’s cake may have been as a result of getting grief from me this year and my daughter last year. But, he did go the extra mile and made it from scratch. He made one of my favorites from my mom’s recipe, pineapple upside down cake.

He discovered something that my father did not discover until later in life; that cake is a pain to make. I am not sure why it is except that it has something to do with the egg whites having to be beaten.

He discovered something else after I blew out the candles my daughter wanted on the cake; hot cake melts wax.

He baked brownies from a box in case the cake did not turn out.

He did not need the brownies. The birthday cake tasted good.

He did make one last discovery about cake baking; do not experiment with the recipe unless your really sure of what you are doing. He added pineapple juice to the brown sugar topping, thus the topping never set up. It was yummy anyway.

I loved my birthday cake. I am looking forward to him making me one next year!
